- 1 cup peanut butter
- 1 cup white sugar
- 1 egg
- Preheat oven to 350
- Thoroughly mix all ingredients
- Drop cookie dough by spoonfuls on cookie sheet
- Bake for 8 minutes
I’ve said repeatedly that I did not inherit the Sanford cooking aptitude gene and I didn’t… but my baby sister, Kodie, did. She’s been cooking since she was eight or nine years old and she’s rather impressive too. I discovered exactly how impressive she was at it when I was pregnant with my youngest daughter, Cali.
My pregnancy with Cali was not an easy one like the one with Alana had been. I was on bed rest during the last few months of my pregnancy and I was miserable – I’m sure that I didn’t make life for those around me a bed of roses either. My baby sister, Kodie, was a blessing in my life during those months. Kodie kept Alana from driving me insane by showering her with attention, she waited on me hand and foot, and must’ve made a hundred dozen peanut butter cookies when I was craving something sweet. Kodie could never understand exactly how appreciative I am for her presence and unyielding support during that time – or how much these peanut butter cookies mean to me or my girls.
Kodie’s peanut butter cookies are now the only cookies that Santa gets on Christmas eve, they are the cookies that both my kids swear are the best cookies in the world, and the cookies that pull me through whatever blues are ailing me. They have become a Sanford Family tradition in their own right.
